T-Boy’s Boudin Review — The Best Boudin in Eunice, Louisiana
Being from Louisiana has its perks. We have the best food in the 337. That’s where I am from. I grew up going to different slaughter houses, gas stations, and actual stores and gobbling this stuff up.

So, just, what is Boudin? From ChatGPT: Boudin (pronounced boo-DAN or boo-DEEN, depending on the region) is a traditional Louisiana sausage that combines cooked rice, ground pork (or other meats), onions, green peppers, and seasonings stuffed into a natural casing. It’s especially popular in Cajun and Creole cooking.
In short, its a sausage with deliciousness inside, can be enjoyed any time. Often enjoyed for breakfast on-the-go.
Being from Eunice, its a staple. So, I wanted to find out who had the best.
I taste tested three different boudins from stores in Eunice, Louisiana. T-Boys, Slaughterhouse, and Eunice Poultry.
T-Boys: I liked this one the best, because it’s not too spicy and it tasted like my childhood. You don’t want a boudin that’s too spicy. The spice will overpower the other flavors and just burn your mouth and your a$$ on the way out. LOL!
Eunice Poultry: This one is just way too spicy. Like I said, the spice over powered everything and I barely knew what I was eating. They have great meats though, otherwise. And I’m sure they have a mild one, that I probably would enjoy more.
Slaughterhouse: They were a close second. So, I grew up on this place. They have since changed ownership, and the new owner (whom I met, and was very nice) is tweaking the recipe a bit. I’m intrigued to see what he does next. The spice level was a bit high on this one, and a lot of folks said its been inconsistent. I think with time, he’ll come back out on top!
